This is the largest region of Spain and offers an area of vast Castilian plains, together with splendid mountain scenery. There are natural parks with practically untouched areas of oak and cork oak, and the land provides grazing for livestock, especially sheep, for which the cuisine is especially noted. This area was a centre of Spanish medieval history, and the importance during that epoch is still evident in many cathedrals, monasteries, castles and fortified towns, many of which are preserved in perfect state. There are no fewer than six Unesco World Heritage Sites here. Of these, the city of Salamanca, the capital, has great historical importance due to its university, one of the oldest in Europe. It is a city of outstanding beauty and rich cultural heritage. Other cities of note are Segovia, with its Roman aquaduct, the Alcazar castle and the gothic cathedral, and Avila, Burgos and Leon, all rich with architecture and historic monuments.
